Admittedly yes they were in the oven for a bit too long. They had inch diameter holes after boiling. Why did they rise like this?

    There is a video out there showing how to make them. The rough explanation is making a tube, hand roll it out to about 10-12 inches long, then join into a ring, then gently roll the ring to close the seam.

    It’s quite common for bagels to close up like this. You actually need to stretch the hole wider than you think, almost 2 inches to account for the rise in the oven. Assuming you boiled the bagels, do a re-stretch after fishing them out of the water (let it sit a little to cool slightly)

    looks almost like a “brezensemmel” (brezel/pretzel bun, sadly no GIF with it available). of course due to the lye, i can imagine super delicious! by the way, for anyone interested, the history of bagels is quite interesting and may be beneficial to anyone trying to create unique and extra flavourful bagels (i am born in germany and my family is part polish, currently making bagels with an italian twist at my job- which is how i got interested in the topic as well)

    Omg I am DYING over the buttholes thing, at least they look like they turned out glorious 😂 I would happily eat a “gloriously baked butthole” for breakfast!!
